Whether you’re staying with us for a while, simply coming for the weekend, or coming for an event, you’ll sample creative, healthy and often organic cuisine that privileges authentic tastes, quality ingredients, and seasonal flows.
So how does our chef, Marc Aupiais, prepare to welcome you to the Domaine des Etangs? By purchasing fresh, seasonal produce from a network of local farmers first thing in the morning, making the most of the estate’s resources (the mushrooms found in our forest, the herbs from the herb garden, pike perch and bass, and game) and then dreaming up dishes throughout the day before preparing a single five-course dinner that everyone shares*. Examples of menus served during our weekend breaks can be found below, but as our menu is constantly changing, they’re but a snapshot of the gallery of dinners we’ve served.
Fish from the Atlantic, Cognac and Pineau de Charentes, Jarnac truffles, Limousin beef, Aquitaine caviar, Belchard® apples and Périgord walnuts are but a few examples of our diverse local fare.
Wine and Cognac
As the produce of our neighbouring region, Bordelais wines have pride of place: they can be new discoveries or current favourites, served by the glass or by the carafe.
You will doubtless enjoy traditional Pineau from Charentes, and we’ve found the best vintages of it for you. And the vineyards that were once picked solely to make Cognac are now lending their fruit to the making of good table reds.
Cognac is yet another of our region’s ambassadors, and should be enjoyed socially. Whether it’s from the famous producers or select small ones, you’ll either like it young and fruity or old and woody. And you’ll have the satisfaction of our cigar cellar at your disposal, should you care for something to accompany your vintage libation by the fireside.
